American Bresse Whole Chicken

This past season we experimented with raising American Bresse chickens for the first time. While they are less meaty overall than a typical Cornish Cross bird and take a bit longer to mature, their rich yellow fat gives them an amazing heritage flavor (they’re sometimes called “the veal of chicken”). The perfect bird for dark meat lovers and making stock!
